Cooking
To begin with the knuckle you need to boil. I prefer this was done in multiservice, time is faster. You can also boil it on the stove. So to fill the knuckle with water, add peeled carrots, onion, garlic, pepper, Bay leaf and salt to taste. Cook until cooked on the stove 2 hours; if in a pressure cooker that it took me 25 minutes.
The finished knuckle to cool and marinate in beer with the addition of soy sauce. The marinating time is 10 hours. I left for the night. You can marinate in the morning and evening to bake.
Pickled knuckle lubricated with mixture of honey and mustard, then bake in the oven at t-180* within the hour to a beautiful Golden brown. Serve with sauerkraut (or cabbage mayonnaise). Very tasty! Bon appetit!
