Continuing the culinary journey through the African continent, would like to invite you to Morocco - a country of wonderful atmosphere, nice people and authentic cuisine. Today, our table got a rabbit. But not one but with a side dish of potatoes, carrots, almonds and lemon.

Ingredients

  • Rabbit

    620 g

  • Lemon

    1 piece

  • Potatoes

    300 g

  • Carrots

    80 g

  • Onion

    1 piece

  • Garlic

    3 tooth

  • Almonds

    2 Tbsp

  • Saffron

    1 tsp

  • Cumin

    1 tsp

  • Cilantro

    3 Tbsp

  • Parsley

    3 Tbsp

  • Vegetable oil

    5 Tbsp

  • Salt

  • Water

    1 cup

Peel the lemon zest and squeeze the juice out of it. Oddly enough, no juice, no zest, we do not need. The desired pulp. Cut it into small pieces.

Peel garlic and cut each slice in half. Onion cut into half rings. In deep pot pour the olive oil and we load up the garlic with the onions. Fry for about a minute and immediately add the cumin and the saffron strands.

The next step downloadable lemon pulp. Stir a bit and diminish the fire to the onions started to burn.

Wash the rabbit meat and put in the same pot. Sprinkle with salt and gently stir.

Add to a pot of peeled carrots, and potatoes whole in their skins. If the potatoes are large, you can cut it into several parts. Add 1 Cup of boiling water. Cover with a lid and simmer for about 20 minutes.

After 20 minutes add the grated almonds and chopped coarsely parsley and coriander. Simmer for another 10 minutes.

Spread on a large platter and served to the table. A nice lunch or even dinner!
