Sand balls with ricotta and krasnogorodsky jelly
Sometimes you want to pamper yourself with something tasty and simple, and I suggest that the cooks recipe shortbread balls with ricotta and krasnogorodsky jelly, which is prepared quite easily. Balls be sweet and delicate structure, which is a win-win combined with the tartness of the berries.

Ingredients

  • Cookies

    170 g

  • Ricotta

    150 g

  • Red currants

    200 g

  • Brown sugar

    2 Tbsp

  • Powdered sugar

    2 Tbsp

  • Water

    50 ml

  • Gelatin

    15 g

  • Coconut shavings

    30 g

  • Butter

    80 g

Red currants rinsed (if using frozen, first thaw at room temperature).

Squeeze juice. I got almost 150 ml.

In a saucepan pour boiled water to dissolve gelatin according to instructions. Then add unrefined cane sugar Demerara from TM Mistral, stir to dissolve the sugar.

Pour krasnogorodsky juice, mix well and pour into silicone mould for candy. Remove in the freezer for 1 hour minimum.

After an hour, make the dough for our balls. For this cookies grind in a blender into fine crumbs.

To shortbread crumbs add powdered sugar and ricotta. Mix well.

Next, add the melted (not hot) butter and knead the dough.

To remove jello from silicone molds. With frozen jelly will be easier to work with.

From dough to pinch off a small piece, the size of about a little larger than a walnut. Flatten into a pancake, in the center put a piece of jelly.
