Blueberry cheesecake without baking
Beautiful dessert for the holiday. Very soft creamy texture.

Ingredients

  • Butter

    50 g

  • Blueberries

    1 cup

  • Sugar

  • Lemon juice

  • Gelatin

  • Soft cheese

  • Cream

    350 ml

  • Yogurt

    350 ml

  • Lemon juice

    2 Tbsp

  • Granulated sugar

    6 Tbsp

  • Gelatin

    2 tsp

1. Melt butter and spread it over the bottom and sides of a split form 23 cm diameter (height 7 cm). Biscuits and remaining melted butter put in a food processor and chop. The bottom of the form to lay the confectionery paper. She put the mixture of cookies with butter and spread it, carefully pressing down. This is the basis of cheesecake.

2. Blueberries with sugar and cook on a slow fire until thick, stirring occasionally, 10 minutes. Turn off, allow to cool for 3 minutes and add 1 tbsp of gelatin. Allow to cool a few minutes and stir.

3. Mix softened cheese (room temperature), yogurt, sugar, lemon juice and half cream.

4. The remaining half of the cream to heat up, not boiling and pour a spoonful of gelatin. Pour gelatin mass into cheese mixture and stir well.

5. To separate the creamy mass into three portions. One will be added to the blueberries. To the other – the juice from the blueberries. The third will remain as it is. But in the end they must have equal volume.

6. Layer biscuits with butter spread berry mixture, top the mixture with the juice, and then clean creamy mass. You can decorate drops of blueberry juice and put into the refrigerator until fully cured.
