My son calls this soup "Borscht with cucumbers". But we all know that soup is another dish))) So I suggest to just prepare a soup with beets and pickles, fragrant and very tasty!

Cooking
Clean and cut vegetables. The vegetables for this soup I cut into strips.
Fry the onions and carrots over medium heat.
Add beets and pickles, fry a couple of minutes. Add cucumber pickle, diminish the fire and leave the vegetables to stew (20 min).
We cut cubes a potato, put it in boiling broth. I make soup with chicken broth but if you cook vegetarian option, on the water, is also good.
Potatoes cooked, the vegetables were petosiris. Spread the vegetables in the broth.
Add ground garlic, black pepper, salt (if needed). Give the soup to boil and turn off heat. Leave with the lid closed to infuse for 15 minutes.
Serve with sour cream and greens. Bon appetit!
