Cooking
Potatoes wash and boil in salted water until tender. Drain, the potatoes cool and cut into slices.
While cooking the potatoes, peel red onion and cut into half rings.
In skillet, heat 1 tbsp oil and fry the onion until Golden brown. Onions are not fried and marinated in vinegar. But I like the sweetness of the onions after roasting.
In a large bowl, mix the remaining vegetable oil, soy sauce. Add cumin, oregano, vinegar and pepper. If necessary, add salt. I'm not salted enough for me soy sauce.
Greens grind. Greens you can use any what to taste (cilantro, parsley, dill, Basil, etc.). I have parsley.
To the dressing add the potatoes, fried onions, ham, herbs and stir. Pickled cucumber cut into slices and add to salad. Salad it is desirable to remove in the refrigerator to potatoes soaked with aromas of herbs, spices and onions.
