Mushroom pickle
Today I have prepared a surprisingly tasty vegetable soup - soup from dried mushrooms. I really want to give this recipe Anastasia Asya-NN and for all who are fasting.

Ingredients

  • Cucumber

    5 piece

  • Potatoes

    5 piece

  • Parsley

    1 piece

  • Celery root

    200 g

  • Carrots

    1 piece

  • Leeks

    0.5 piece

  • Onion

    1 piece

  • Water

    2 l

  • Mushrooms

    100 g

  • Vegetable oil

    50 ml

  • Salt

  • Brine

    100 ml

  • Greens

  • Black pepper

Cooking

Dried mushrooms pour boiling water and leave overnight. The next day, boil the mushrooms until tender (together with mushroom water) in 2 l of water.

Onion cut into half rings, and celery, carrots and parsley root (I was not there, unfortunately) - small cubes.

To heat the oil and sauté the onions until transparent.

Add vegetables, simmer for another 10 minutes, stirring occasionally.

Remove with a slotted spoon from the broth of dried mushrooms are ready, add the potatoes cut into small cubes.

Dried mushrooms to slice and add to vegetables, simmer them together (until cooked potatoes).

Add leeks, roughly chopped, and stew all together for another 2 minutes.

Add steamed vegetables in a mushroom broth to the potatoes. Boil for 5-8 minutes.

Pickles clean with a vegetable peeler from the skin, cut into strips and add to the pickle, boil for 2 minutes and try, then add salt and pepper. To try again and, if necessary, add cucumber pickle (I don't need).

Add the herbs and immediately pour into soup bowls. Pickle turns out to be very satisfying, despite the fact that lean. Bon appetit!
