Spicy vegetable soup with cheese nokami
There are so many fresh vegetables at very reasonable prices that I want to use this literally every day. I enjoy trying to diversify its numerous vegetable soups. Today we have soup with cheese nokami. Join us!

Ingredients

  • Carrots

  • Chicken egg

  • Flour

    80 г

  • Salt

  • Black pepper

To prepare the products. Vegetables thoroughly wash and clean.

Onions, carrots and celery clean and cut into thin strips, bell pepper - thick strips, potato cubes. Cabbage disassemble into small florets. Squash cut into small cubes, onions chop. Garlic finely chop.

Fry onion, carrot and celery in vegetable oil until soft. Set aside.

Meanwhile make the dough for nocow. RUB on a small grater cheese, add milk and salt.

Beat 1 small egg (or half if large) and add the flour. Mix well.

Add finely chopped cilantro or dill and stir again. The dough should be quite thick, but soft.

Put in a saucepan the boiled vegetables and pour 2.5 liters of boiling water, bring to the boil, add the potatoes, peppers, squash and cabbage, again bring to a boil, add salt and cook on low heat for 10 minutes.

After a specified time add to the soup a pinch of pepper peas, Bay leaf and grated ginger.

Then at a low boil in a soup small pieces of dough, smaller than a cherry (gnocchi when cooked, swell). The dough should be separated a little spoon, each time dipping it in cold water, and shake in the soup. Cook for 3-4 minutes. Then turn off the heat, add in the soup garlic and let it infuse under the lid for 10 minutes.
