Cooking
Squid clean. Dry it with a paper towel. We need carcass without "ears".
Green onion cut into thin feathers, ginger RUB on a small grater, garlic and red chili pepper finely chop. Amount of ingredients depends on Your tastes.
For frying it is better to use a wok or pan with a thick bottom. A mixture of vegetable and sesame oil fry the calamari 2 minutes. Spread the squid in a bowl.
Fry in same oil a few minutes the mushrooms. I took the cooked mushrooms. You can take any mushrooms.
Add to the mushrooms, green onions, garlic, ginger and hot red pepper. Stir.
Take soy sauce "Kikkoman".
Add in the fried mushrooms, the squid and pour soy sauce.
Add sugar, salt, sherry and seasoning "Blend of Chinese spices". I don't put salt when I use soy sauce. Sherry you can substitute any dry white wine. Mixture of Chinese herbs include: anise, Sichuan pepper, fennel seeds, cloves and cinnamon. Sichuan pepper has a very distinctive flavor, you can substitute white pepper, although this is not equivalent.
Stired squid with mushrooms and seasonings, simmer for another lid open, on high heat for one minute.
