Stuffed mushrooms is always delicious and beautiful appetizer on the holiday table. I had a chance to try a lot of options, but this time I wanted something special and trial I managed to create a very harmonious and delicious stuffing with an unusual composition. I never would have thought that walnuts, tomato, shrimp, and cranberry sparkle with such wonderful taste!

Cooking

Blanchere tomatoes in boiling water, remove the skins, cut into cubes. Grind nuts, dried bread (you can make homemade croutons).
For the filling, finely chop the onion, shred half of the mushroom mass (the one that we pulled out of hats, including legs). In vegetable oil fry slightly the mushrooms and onions, allow to cool. Mix tomatoes, croutons, walnuts, fried onions and mushrooms, all mix well, add sea salt with herbs. Remove the mushrooms from the marinade, the remains add to the stuffing and stir again.
Prepare the shrimp:drop them in boiling water for 1 minute, turn off the gas and leave the shrimp in there for 15 minutes. Then recline in a colander and clean.
Tight fill cap mushrooms the mix, spread on top, 2 shrimp and 2 cranberries.
Put into the form and sprinkle the top with Parmesan cheese.
Put in oven preheated to 200 degrees for 20-25 minutes. You can submit directly in the mold.
