Let's start with the mayonnaise. Separate the yolks from the whites. Add the lemon juice and wine vinegar. Stir.
step-1
A thin stream pour in the rapeseed oil whisking the mixture with a mixer.
step-2
Sprinkle with salt and again whisk thoroughly.
step-3
Add the creme fraiche (you can substitute thick sour cream) and stir.
step-4
Let us crayfish. Drain off water and put the neck on a paper towel. Squeeze below the neck was almost dry. (This is important because we are going to put the neck in a mayonnaise sauce and if the neck will water the sauce will be too liquid and will flow along the wafer. For this reason, you need a thick cream.)
step-5
Finely chop the onion and dill. The neck cut into big pieces.
step-6
Put cervical, onion and dill in a mayonnaise sauce, salt, and pepper. Stir.
step-7
Waffles. Melt the oil and allow it to cool slightly.
step-8
Whisk the eggs, salt and flour to obtain a homogeneous mass. Add the butter and lastly milk and cream. Whisk for a minute and the dough is ready.
step-9
It remains only to put the batter into the waffle iron.
step-10
The finished wafers are cut into small pieces, for example for 4 slices and it will turn out tarts. Or put 1 wafer, it is filling and cover with the second wafer obliquely. Bon appetit!!
