Cake-meringue
Cake for fans of meringue, prepared with minimal effort, it turns out very delicious, the cake is perfectly sweet meringue and cream with red currants.

Ingredients

  • Egg white

    4 piece

  • Sugar

    230 g

  • Powdered sugar

    2 Tbsp

  • Cream

    400 ml

  • Red currants

    250 g

  • Salt

    1 handful

  • Mint

    1 sprig

Preheat the oven to 110*C On the baking paper draw two circles with a diameter of 15 cm with plates. Whip the egg whites with a pinch of salt and sugar to stable peaks, at least 10 minutes.

Protein mass put in cooking bag, squeeze out a lot of stencils. With a spoon dipped in cold water, trim. Bake the cakes for 2 hours, leave in the oven to rest for another hour with door ajar. Finished cakes remove from the parchment.

Prepare the cream: with a mixer beat whipping cream with powdered sugar. 1/4 part of cream aside for decoration. In the main part add the red currant berries

Put the cake together. First one layer, it spread all the cream with currants.

On top put the second cake layer, press lightly. Grease top of cake and sides white cream without the berries with a fork to make "pattern"

Decorate with red currant berries and mint.

Refrigerate and serve after 1 hour. This cake is not intended for storage, it is necessary to eat immediately, enjoying the taste of crisp meringue and soft cream, but if you have some cake, then store it in the freezer, take it half an hour before serving. I do not recommend to leave overnight in the fridge, as it will get soggy meringue. Bon appetit!!
