Cooking
Heat the water and sugar until dissolved last. The resulting syrup leave to cool.
Prickly pear is cleaned, as shown in my recipe for "jam of prickly pears" to cut into pieces, put in blender, blend.
The resulting juice strain and measure out 250ml. Put in refrigerator for 20-30 minutes.
Egg protein vzbit in thick foam. For better stabilization, you can add a few drops of lemon juice. Mix the sugar syrup with the juice and pour in protein. Mix well. The resulting mixture is freeze or in the freezer ( for achieving a thick smooth consistency transfer to a container and put into the freezer), or just the protein blend in juice and syrup to put in the freezer within 2-3 hours, periodically stirring to obtain a homogeneous consistency. I froze in the freezer, in a hurry photo blend did not. I'm sorry...
That's what we get after complete freezing of our dessert!
