My boys asked for lunch cutlets. I have meat for cutlets was not, lay a slice of lean veal and a little less than beef liver, the balance. So I thought to combine these two lonely pieces. Turned out pretty tasty washers with a taste of liver.

Cooking
So, as always, I have the liver cleared of films and soaked in milk. For stuffing mince the veal and liver, then onion and soaked the slices of bread. Add the egg yolk and mustard. Whisk the whites with salt and put into the stuffing in two steps, gently stir. Remove the meat back into the fridge for a couple of hours. Then take it out, knead again and begin to sculpt our washers.
With wet hands make small balls.
Then dip them in breadcrumbs and lightly press the top. That is, they should not be flat instead of plump.
Fry on medium heat for 10-15 minutes on both sides. Garnered any vegetables or cereal and call home for dinner :-)
