Beef roll with vegetables
Try the juicy meatloaf with assorted vegetables. Men will love it! This is my experimental version of the roll, but everyone liked it, ate three in one sitting.

Ingredients

Take the beef tenderloin, wash, dry it with a napkin.

Lubricates meat any prepared mustard and spices (any under hand). If the spices no salt, you can salt a little because the mustard has salt. I use mustard homemade tomato pickle.

Then Packed in foil and put in the fridge for 1.5 hours for marinating. Such meat can be prepared in advance the evening and cook the next day for lunch or for the arrival of guests.

Next lightly fry the onion in vegetable oil.

Pre-prepared marinated zucchini (can use squash), cut into strips.

Add the zucchini to the onions with a tablespoon of butter. A little stew on low heat.

Then add the beans and red sweet pepper, diced. A total of stew, all the vegetables not more than 10 min a little salt, not forgetting that the meat is also salted, so don't overdo it with the salt.

Vystelim a baking sheet with foil, grease with vegetable oil, put the loaf and garnish: potato halves with seasoning and red peppers (I'm just a fan of roasted peppers for the winter freeze it in huge quantities and added to everything for myself). Lightly grease mayonnaise and put in oven at t=200 gr.

Approximately 40-50 minutes take out the potatoes and peppers, and meat continue to cook. Fully prepare the meat for 1.5 hours.
