Pilaf with Shirin Gourma
Shirin Gourma is a traditional Azerbaijani fried, which is prepared from meat, onions and dried fruit. A dish such as fried served on a rice pillow pilaf.

For cooking pilaf with Shirin gorma must wash rice 3-4 times under running water, preferably warm.

In the casserole or Dutch oven (or thick-walled frying pan) heat the oil, add rice and, stirring well, fry so that the oil enveloped every piece of rice. After that, the pilaf add saffron, pour water above the rice to 1-1,5 cm, cover and cook until tender, on medium heat. Cooked rice looks very nice, not a rice grain slipout and it's just fine for risotto.

To cook fried Shirin Gourma for pilaf, the meat must be cut into small pieces of about 50 g.

Chop onions and fry in a pan in butter

Add meat, salt, saffron and simmer over medium heat.

After 15 minutes, add pre-soaked dried fruits, broth or water and simmer until tender meat.

After the pilaf and roast are ready, put the pilaf on a platter, preferably on a flat. On top of the pilaf, put the fried Shirin Gourma and decorate with dried fruits. Bon appetit!
