Pickled pumpkin with mushrooms and cheese
Amazingly flavorful and tasty recipe! Again taken from a magazine of holiday recipes. Looks very elegant, and the combination of flavors very successful. Urge to try!:)

Ingredients

  • Pumpkin

    250 г

  • Onion

    1 шт

  • Zucchini

    1/2 шт

  • Mushrooms

    6-7 шт

  • Cheese

    2 ломт.

  • Vegetable oil

    2-3 ст. л.

  • Soy sauce

    1 ст. л.

  • Nutmeg

  • Pistachios

Pumpkin cut into cubes of medium size and marinate in mixture of 1 tbsp soy sauce and 2 tbsp (I used olive) oil. Leave for 10 minutes. Then place in a preheated oven at 160 degrees for 20-30 minutes until tender.

Cut the onion into thin strips.

Roast him over a slow fire in vegetable oil until Golden brown.

Prepare the shitake mushrooms and zucchini. Wash, dry and puresim them into cubes.

Peeled pistachios of smilcic knife.

Cooked pumpkin out of the oven.

And begin to assemble the dish. Spread the pumpkin slices on a dish, spread over it the fried onions and sprinkle with grated nutmeg.

Spread on top of cheese. My slices were small, so I put two, but if they are large enough that one will suffice.

On top of the cheese put fried mushrooms with zucchini.

Then put it right in the dish in the oven to melt the cheese, and then sprinkle with pistachios and serve. Very tasty with red wine and crispy toast.
