Cooking
Onion cut into half rings, carrot grate on a coarse grater or finely chop. In olive oil for a second fry the onion and add to it carrots. Fry for a few minutes.
Clean sweet pepper, cut into thin stripes.
Add to the onions and carrots. Fry for a few minutes, stirring occasionally.
Add the chopped tomatoes, salt, pepper, sweet paprika. If using fresh tomatoes, after rinsing them with boiling water, remove the skins. Optionally, you can add other favorite spices.
Cover with a lid and stirring occasionally, simmer about 15 minutes. In the process of trying on spices, depending on the acid of the tomatoes add necessary amount of sugar (I left 1 tbsp.)
In the end add crushed garlic.
Remove from the heat and add the greens, in my case, it's parsley. Cover with a lid and leave for 10 minutes to infuse.
At this time, separately fry 2 eggs. This can be done simply by driving the eggs to the pepper for a few minutes until tender. Salt, pepper. Served in portions with bread.
