Cooking
In a saucepan with a thick bottom pour olive oil and heat.
Add the chopped onion and garlic. Lightly sauté.
Chop the heart, liver, kidneys, send it in a pan with oil.
Then put the sliced lungs and stomach. All lightly saute. Then pour water to cover all the contents and cook until soft offal. It is convenient to use a pressure cooker, so KK cooking time is reduced to 15 minutes.
Green onions, garlic, fennel, anise cut. You can also use spinach, kavaliro.
We will need the broth from the simmering offal (2 bucket). When the offal is cooked, salt, pepper and send chopped green "salad" and cook until cooked greens.
As the greens cooks very quickly begin to prepare sauce. Separate the whites from the yolks. Beat the yolks with lemon juice.
Gradually add a little of the cooled broth, continuing to whisk.
Beat egg whites with a pinch of salt.
Combine with egg yolks and the resulting lush pour the mixture into the pan. After 1-2 minutes remove from heat.
