Generally cooking wine are cheaper than the corresponding wine sold in regular liquor store. The characteristics of Marsala close to the wine of Madeira, but it's sweeter. So I guess you could use Madeira, adding a small amount of sugar, although I have not tried. Chicken cooked by this recipe turns out very tender, soft and flavorful. It goes perfectly with a side dish of potatoes. In my opinion, the best mashed potatoes (prepared with hot milk and butter). However, you can serve chicken Marsala with roasted or baked potatoes.

Cooking
We will use here is the Marsala wine for cooking. Two bottles of 473 ml
Mushrooms washed, cut into large slices along the legs. Small mushrooms cut in half, medium ones into 4 pieces. Large - 6.

Heat two frying pans with a mixture of vegetable oil and butter
Coat the chicken pieces in the flour
Fry over high heat until Golden brown (about 5 minutes per serving).
As roasting, spread the fried portions in a low pot or other tableware. The chicken is still raw inside.
In the pan, where roasted chicken, olive oil, and lay out mushrooms. Fry on high heat without a lid for 5 minutes.
Add the Marsala wine and bring to a boil - boil for a few minutes without a lid, so the alcohol has evaporated

Sprinkle with salt, cover with lids frying pan, bring to the boil and reduce the heat to a small. Simmer under the covers for about 30 minutes
