Actually, this recipe is our family spring and summer - cottage, inexpensive zucchini (yet their ripe), going to visit... and we need to prepare a quick and tasty dish! Now, almost in the middle of autumn, I have left 2 zucchini and decided we need to remember about the summer days!

Cooking
Prepare our products.
Zucchini cut into slices thickness of about 1 cm and season with Salt and leave for 10 minutes to drain liquid.
While the zucchini drip down, prepare the sauce - soft low-fat cottage cheese (or sour cream or natural yogurt) mix with chopped parsley (or any greens) and garlic. Season with salt and pepper to taste. Put into the refrigerator.
In a frying pan heat a little vegetable oil and fry the zucchini on both sides in a rather large fire under the hood. Put on plate, pour 1 clove of finely chopped garlic (more for the smell than spicy taste).
Mix with a fork or whisk eggs, zucchini to put on the same pan and pour the eggs, fork scrambled eggs helping to fill all the voids between the zucchini. Sometimes I add fried onion, tomatoes, bell pepper, cheese, greens, but for some reason my like the easiest option.
Cook on slow fire for 10 minutes.
Serve with sauce hot or cold. Bon appetit!!!
