Description
Offer your variant of pike (and any other fish with a low content of the bones), baked in the oven with vegetables with homemade mayonnaise.

Cooking
Carcasses of walleye cleaned from the innards, cut the head and fins, fry for 2-3 minutes on each side.
Greens finely chop, cheese grate, mushrooms (I took frozen) put in one piece, if a little thick - sliced, the cherry tomatoes cut into 4 parts.
Onion cut into cubes and fry with mushrooms. Potato thin slices and fry until soft.
Now mayonnaise. In a deep bowl beat the egg, there is a pinch of salt, sugar and a tablespoon of mustard - I'd take a sharp.
Begin whisking in some way - can the old fashioned way with a whisk, you can with mixer. Whisk in the mixture, drop by drop, add sunflower oil (lovers you and olive), when the mixture begins to turn white and thicken, the oil can already pouring a thin stream. And whisk until thick. It took me about a Cup of oil.
Now take a fireproof baking dish and we add back the ingredients in the following order: first the roasted carcasses of the perch, then mushrooms with onions, then tomatoes, on top of lightly fried potatoes.
All this pour whipped mayonnaise. And sprinkle with mixture of grated cheese with herbs.
And all this in the oven at 180 degrees for 15 minutes (no longer required since all products are brought to half-cooked). So much cheese does not dry out, the shape I covered with baking paper, moistened with water, but you can foil.
After 15 minutes take out and serve. The dish is for 2 large portions or 4 small. Bon appetit
