Yesterday was visiting and she cooked pasta with eggplant and chickpeas. We liked it. and today, thinking-wondering what to cook for dinner, we decided to interpret the recipe in their own way. Instead of pasta use rice noodles and to top it all prawns. And have not regretted.

Crush and chop garlic, put in pan with olive oil, fry quickly. Same here, cut dice the eggplant and fry until Golden brown.
After that add finely chopped tomatoes ( preferably peeled), boiled chickpeas, Basil, and parsley. If the tomatoes are not juicy, pour 50 ml of water, bring to the boil and simmer over low heat for 8-10 minutes. Add the chopped parsley. At this time, boil the rice noodles according to instructions on the pack - it is different.
It was the turn add the peeled shrimp to the vegetables, season with salt, add a pinch of sugar and pepper. Instead of salt I used soy sauce. Cover with a lid and stew for 1.5 more minutes.
Add noodles, stir, heat over all together for 30 seconds, invite to the table and we wish you all a pleasant appetite!
