During LENT cereals are often prepared with vegetables. The dishes are hearty, tasty and healthy. Rice with vegetables baked in the pumpkin "pot", perfect for the Lenten table.

Carrots, onions and garlic finely chop, saute in a small amount of olive oil, salt, pepper. Add the finely sliced sun-dried tomatoes.

Figure rinse well, drain through a sieve, add the wet rice to steamed vegetables, stir.

Prepare the pumpkin "pot": cut a piece of pumpkin (12-15 cm) with a convex (where the seeds are) hand, clean the "pot" of the seed, wash the outside, Pat dry with paper towel. Pumpkin "pot" inside a little salt, pepper, drizzle with sunflower oil. Put "pot" in: metal (the right size) pan. Or wrap "pot" foil. Rice with vegetables put in a pumpkin "pot", pour the rice in hot water (1 Cup rice=2 cups water), cover with a lid. Bake rice in the oven at 200 degrees, 50 minutes. Then turn off oven heat, leave the pumpkin "pot" in the off oven for another hour.

In the finished dish, the rice fully absorbs the liquid, it will turn out fragrant and crisp, imbued with the taste of pumpkin and vegetables.
