Pumpkin pancakes with minced meat tomato salad
In anticipation of the next squash season, I want to offer you a simple and interesting recipe of pancakes from zucchini (zucchini), with the addition of meat, served on a pillow of salad with tomatoes, sour. A real summer recipe for hot days or a quick dinner.

Ingredients

  • Zucchini

    600 g

  • Minced meat

    250 g

  • Chicken egg

    2 piece

  • Bread crumbs

    6 Tbsp

  • Dutch cheese

    50 g

  • Salt

    1 tsp

  • Allspice

    0.5 tsp

  • Tomato

    600 g

  • Bow white

    1 piece

  • Olive oil

    5 Tbsp

  • Vinegar

    5 Tbsp

  • Salt

  • Allspice

  • Vegetable oil

    5 Tbsp

  • Butter

    25 g

  • Feta

    50 g

Cooking

Grate the peeled zucchini (without seeds) or zucchini on a coarse grater

Add the beef, eggs, salt, pepper. Mix well

Add the grated cheese, breadcrumbs

Knead by hand until smooth

In a pan heat the 2 types of oil

Put fritters and slightly flatten with a spoon (I got 16 pieces)

Fry on both sides for several minutes, until it will turn brown

Put fried pancakes on paper towels to rid of excess fat

Salad. While frying the pancakes to cook the salad: cut into slices or half-rings, tomatoes, thinly slice the onion half rings (I used 2 large green onions, with small white heads)

To prepare dressing: shake well in the jar (beat with a fork) olive oil with balsamic vinegar, salt and pepper. Alternative: vegetable oil, lemon juice, salt and pepper

Season the salad.

Serve: on a plate put the salad on top of the pancakes and sprinkle with crumbled feta cheese or feta
