Ingredients

  • Eggplant

    2 piece

  • Olive oil

  • Salt

  • Onion

    2 piece

  • Tomato

    3 piece

  • Green olives

    100 g

  • Capers

    30 g

  • Sugar

    3 Tbsp

  • Vinegar

    30 ml

Products. (I came across at the supermarket eggplant-"melon" and I used this pretty boy for this dish)

Eggplant cut into slices, salt and leave for 10-30 minutes (depends on the type of eggplant). Wet a paper towel and fry in olive oil until it will turn brown.

Tomatoes cut into crosswise, pour over boiling water, immediately cool and remove the skin.

Fry lightly in butter onions, diced tomatoes, olives, capers, add the sugar, balsamic vinegar

... and roasted eggplant. Stew over low heat all together under a lid for 7-10 min.
