Ingredients

  • Fat

    1 kg

  • Water

    1.5 l

  • Salt

    4 Tbsp

  • Black tea

    0.5 cup

  • Black pepper

    1 tsp

  • Peppers red hot chilli

    1 tsp

  • Coriander

    1 tsp

  • Cumin

    1 tsp

  • Garlic

    4 tooth

  • Bay leaf

    2 piece

  • Adjika

    1 Tbsp

  • Allspice

    4 piece

Cooking

Boil water, add salt, Bay leaf and allspice. Pour the tea, bring to a boil. Bacon cut into small pieces and put into brine. Boil for 20 minutes in a slow boil.

In a mortar mix ground coriander, cumin, hot and black pepper.

In a mortar put the garlic and grind with spices. Add adjika. Mix well.

Cooked bacon, remove from brine, allow to cool slightly and dry off.

Still warm RUB the fat with a sharp mixture.

Wrap each piece in parchment.

Wrap grated fat even in a towel, wrapped tightly. Leave for 6 hours at room temperature. Then in a towel to remove in the refrigerator for 10 hours.
