Vegetable moussaka
Today made a very interesting moussaka. Very hearty and delicious Lenten dish. Once again was surprised of the compatibility of products. Daughter with an appetite ate that much for his ears popped. And my husband really liked it. I think that this dish is most likely "explanation of Greek cuisine" - but I highly recommend...

Ingredients

  • Onion

  • Garlic

    1 tooth

  • Vegetable oil

    70 ml

  • Tomato paste

    50 g

  • Water

    0.75 cup

  • Salt

    1 tsp

  • Rosemary

    1 piece

Chop the peeled onion, garlic, celery and tomatoes (if fresh - it is pre-scalded with boiling water and peel).

Boil until cooked in salted water rice. In parallel, boil the potatoes in their skins.

2 tbsp vegetable/olive oil, deep oil until spasserovat transparency onions and garlic. Add the diced celery and sauté all together, stirring occasionally, about 5 minutes.

Add cooked rice, tomatoes, tomato paste and water, stir and simmer on low heat 10 min. Before baking to keep the rice warm vegetable.

Boiled potatoes peel and cut into slices.

Eggplant peel and cut into lengthwise thin slices (no more preliminary preparation not necessary). Fry them until it will turn brown in vegetable/olive oil. Regarding salt: I'm not salted at all. Sear in a pan after them potatoes.

The oven to put on heating at 180*C. place in a heat proof shape layers: rice with vegetables, potatoes, and eggplant.

To repeat the sequence of layers. On top lay a sprig of rosemary or a sprinkle of dried. Close the form with foil and place in the preheated oven for 15-20 minutes.

Very fragrant! Delicious and satisfying! There is almost no salt and only 1 sprig of rosemary for flavor. Lenten and vegetarian dish.

Note: this dish is delicious and without eggplant. My daughter is happy to eat it fragrant vegetable rice with potatoes. But without the celery is not enough!
