Pancakes in a hurry
Due to the small secret of my grandmother's pancakes get a lush, airy and not greasy.

Ingredients

  • Yogurt

    0.5 l

  • Vegetable oil

    6 Tbsp

  • Chicken egg

    1 piece

  • Salt

    1 tsp

  • Sugar

    1 Tbsp

  • Flour

    2 cup

  • Soda

    0.5 tsp

Yogurt (the sourer, the better), egg, vegetable oil, salt and sugar mix. Add the flour and knead a smooth dough with no lumps, thickness of good cream.

When the dough is fully mixed, add soda (not slaked) and again stir thoroughly so that the baking soda is fully dissolved. Let the dough stand for 10 minutes for swelling of gluten and the reaction of baking soda with yogurt.

Baking the first portion of the muffin pan greased with vegetable oil, very thin layer. For later servings – do not lubricate at all. If you have a frying pan with Teflon coating, and the first portion of the lubricant is not required. Molded pancakes tablespoon. One spoon test one muffin. Bake on a preheated pan for 2 -3 minutes on each side. The oil contained in the test, provides an easy release. Due to the fact that we are adding oil directly to the batter, the pancakes turn out not greasy, lush, airy and not needed to add oil to the pan.

Serve and eat with anything: sour cream, honey, jam, melted butter, caviar, pate, soft cheese, etc. Bon appetit!
