Cream soup of cucumber
Potage aux Concombres. The soup is very light, delicate - in a word, amazing. Good both hot and cold.

Ingredients

  • Cucumber

    700 g

  • Onion

    2 piece

  • Broth

    1 l

  • Butter

    40 g

  • Vinegar

    1.5 tsp

  • Dill

    0.5 tsp

  • Semolina

    4 Tbsp

  • Black pepper

  • Salt

  • Greens

  • Sour cream

    1 cup

Cucumbers washed, peeled and cut into cubes 1 cm 1 small cucumber cut into thin slices.

Onion peel and finely chop.

In a pan melt the butter and fry the onion for several minutes until transparent.

In the broth add passerovanny onion, diced cucumbers, vinegar and dried dill, bring to a boil. To make lower the fire and add the semolina, stir thoroughly to avoid lumps. Cook for 20-25 minutes, at the end add salt and pepper.

Ready soup to blend it using a blender. Add half a Cup of sour cream and mix thoroughly. Pour into soup bowls, add thinly sliced cucumber, sour cream and greens.
