Cooking
We will prepare our ingredients.
Cut the tomatoes into slices. Finely chop the garlic.
Then chop the onion feathers of medium thickness.
Olives I cut in half, but if you want you can take out and entire! Mix the tomatoes, onion, garlic, olives, 1 tsp Provencal herbs, fennel seeds, add salt to taste. Add the olive oil.
The remaining herbes de Provence, salt, and 2 tbsp oil mix.
Chicken cut into serving pieces. RUB chicken pieces on all sides our mixture.
Spread half of the vegetable mixture into a deep baking dish. Put on top of chicken pieces.
On top of the chicken put the remaining vegetables. Put in a preheated 190°C oven and bake until set, about 1 hour 10 minutes. Serve the chicken hot.
