Soak pieces of bread in water (or milk). The greens and the onion finely chopped. Mince the herbs and onion, then the bread (squeeze excess water), peel the carrots and meat. Stuffing mix well. Add salt, pepper, mustard and egg yolks.
Beat the whites separately to a froth. Enter in two steps in the stuffing, mix gently. While the beef is brewing, prepare the mushroom stuffing.
Mushrooms chop and fry in vegetable oil, adding the onion, garlic and salt to taste.
