Eggplant in tomato sauce
I love summer for so many natural products and many foods can be your favorite to compose.... Here is one of my very favorite dishes... highly recommend to fans of eggplant :))))

Ingredients

  • Eggplant

    1 kg

  • Tomato

    1 kg

  • Onion

    2 piece

  • Garlic

    4 tooth

  • Basil

    1 coup

  • Cilantro

    1 coup

  • Vegetable oil

Cooking

Slice and soak in salted water eggplant, Squeeze and fry in vegetable oil on both sides.

Tomatoes pour over boiling water for a minute and drained of water (so very easy to separate the peel), cut up the tomatoes.

Fry finely chopped onions (Not on the remains of the eggplant after roasting):))) Then, pour the tomatoes and 7-10 minutes carcass.
