Succotash with vegetables
Unusual and delicious thick soup-stew! Helps me when time is short, and I want to cook something "hot&am p;quot;! I also like that this soup is good both hot and warm... Succotash is a dish of North-American cuisine, which is prepared mainly from corn and beans or other legumes. In addition to these basic and simple and affordable (the so-called "poor& quot;) products, the dish can be vegetables, as in this variant of the course.

Ingredients

  • Pepper

  • Onion

    1 piece

  • Beans

    400 g

  • Garlic

    4 tooth

  • Corn

    160 g

  • Broth

    1 l

  • Olive oil

    2 Tbsp

  • Salt

    1 g

  • Black pepper

    1 g

  • Cream

    50 ml

  • Parsley

    2 Tbsp

To prepare from vegetables. Onion peel and cut into feathers. Bulgarian pepper to wash, remove seeds and cut into stripes.

In a saucepan, heat the oil and fry the onion for a couple of minutes, stirring occasionally.

Add to the onions sliced pepper and fry another 7 minutes.

Squeeze the vegetables to the garlic, stir and fry for another minute.

Then add to the pot of rinsed beans and corn.

Pour hot broth (or just water) and from the moment of boiling, simmer for 10 minutes on low heat. Add salt and pepper to taste.

Now at the very end pour in the cream and allow to warm up.

Add the chopped parsley and remove from heat. Let stand 15-20 minutes (can be longer) and serve.
