Cooking
First you need to combine the sugar, vanilla sugar and egg yolks at room temperature.
Beat with a mixer in a magnificent mass. Add the sifted cocoa. Mix well.
Then add sifted dry milk and starch, mix well.
Gradually pour in the hot milk. If you are doing from home, like me, the milk must be fresh. Mix well.
Add the butter and bring to a boil, stirring constantly.
Once boiling, immediately remove from heat and put in cold water. I put in a large pot with cold water. Leave it to cool down. Then cover and put in refrigerator for 1-2 hours.
Sticks I made. This off dry, but a strong branch of a tree, cleanse them from the skin and wrapped in foil.
Take out the ice cream mix from the fridge, see what it is as thick as cream...
Then I do in the freezer, but you can skip this step.
