1. Preheat the oven to 200C. Onions cut into thin half-rings.
2. Melt the butter in a frying pan, add olive oil, onion, salt, pepper and simmer over low heat, stirring 10 minutes. Add sugar, simmer for another 5 minutes. Add the vinegar and stew for 5 minutes. Reduce the heat to low and cook for another 10 minutes. The onions should caramelize and acquire the texture of thick jam.
3. Spread caramelized onions in a refractory form, greased with butter, sprinkle 2/3 of the grated cheese.
4. Cover the stuffing with dough, tuck the edges. (I have dough left, I was rolled into sausages and put on the edges of the pie)
5. Coat the dough with the mustard and put into the oven for 25 minutes.
6. To give the cake a little to cool off and flip it on a plate or Board. While it is hot, sprinkle with remaining cheese. Serve with fresh salad.
