Stuffed eggplant baked in tomato sauce
If you love eggplant, then this is the dish for you. I love this vegetable, but it "eats" a lot of oil, you have to come up with something new, based on old favorite, but a bit overexposed, with healthy dishes made from eggplant. Share with you the idea.

Ingredients

  • Eggplant

    2 piece

  • Mushrooms

    9 piece

  • Onion

    1 piece

  • Green onions

    2 plug

  • Pasta pepper

    1 Tbsp

  • Tomato

    4 piece

  • Salt

  • Seasoning

  • Sweet pepper

    1 piece

Cut the eggplant along the plates and fry from both sides on the grill or in the toaster (can be in oil, but I don't like). Put them on a plate.

Filling: finely chop mushrooms, onion, green onion, sweet pepper, fry in a pan for 3 minutes, add a spoonful of pasta, salt, pepper and stew for about two minutes. Ready.

The sauce is the easiest. To turn tomatoes into a puree and season with salt to taste.
