Pancakes from ancient times was loved and very common dish in Russia. In the old days pancakes were usually baked dough, which was mixed from a variety of flour: buckwheat, wheat, peas, rye. Cooking pancakes was a real mystery. In this process the owner does not allow anyone from home and, especially, strangers. This year in our city hosts national pancake day, and I decided to keep and bake real Russian pancakes. Thought they are made from buckwheat flour.... but, apparently, compassionate hostess bought up all the flour, maybe it was all bought for obzhorny series. :-D, Well, had to settle for what's left, and buy rye flour... But from her pancakes turned out very delicious and beautiful!!! Most importantly patience and time. Help yourself!!!

Actually the main products, though one testicle less....just taking pictures when the dough already regret booking, and this is its use. :-D
From flour and yeast diluted in a glass of milk, prepare the dough. Give a little stand. The remaining heated milk, melt in it the butter, add salt, sugar and yolks of eggs. Mix, combine with yeast mixture, mix thoroughly and put on 1.5 hours in a warm place. Just make sure that not run away!!! And then I have such attempts were. :-D.
When the dough will rise it is necessary to press down, stirring gently with a spoon or wooden spatula. Do not rush to make pancakes, the batter has to stand so that the yeast did not bring harm to our stomach. ;-) When the process (lift-the-runner mills) again a few times, you can enter into the dough beaten egg whites.
To mix the dough and the whites carefully, as well as in the preparation of sponge cake, bottom up.
And you can bake in a hot pan, the best course at the present of iron, and I baked for lack of the most ordinary. Flip them hard enough, they are very delicate, so I recommend to make pancakes small in diameter.
