Lean oat pancakes with banana and cinnamon

Ingredients

  • Oat flakes

    100 g

  • Flour

    150 g

  • Honey

    3 Tbsp

  • Banana

    1 piece

  • Cinnamon

    0.5 tsp

  • Water

    240 ml

  • Soda

    0.5 tsp

  • Vegetable oil

    2 Tbsp

  • Salt

To prepare fritters, I used Hercules from traditional Mistral

Hercules grind in a coffee grinder. Banana mash with a fork. Mix the oatmeal with flour, salt, mashed banana and honey, add the vegetable oil.

Pour the baking soda with boiling water and immediately mix with the dough. Add cinnamon. Stir the mixture until smooth. The mixture turns like thick cream.

Heat a skillet on medium heat, grease it with vegetable oil and fry pancakes for about 30 seconds. on each side, until it will turn brown. Pancakes are not very sweet, so eat them sprinkled with powdered sugar or with your favorite jam or marmalade, and certainly warm.
