Description

Baked eggplant in Bulgarian
Excellent cheese and vegetable garnish, which is cooked easily and quickly!

Ingredients

  • Eggplant

    1 kg

  • Tomato

    3 piece

  • Feta

    200 g

  • Olive oil

    100 ml

  • Milk

    1 cup

  • Chicken egg

    3 piece

  • Parsley

    2 Tbsp

  • Salt

  • Black pepper

Cooking

Eggplant peel and cut into cubes. Heat half the vegetable oil and sauté eggplant, stirring occasionally, 7-8 min. add Salt and pepper to taste and spread in a baking dish.

Tomatoes wash, cut into cubes, add the Feta and parsley. Sprinkle with mixture of remaining oil and mix gently.

Bake 15 min. at 180 °C.

Increase oven temperature to 200 °C. Beat the eggs with the milk and a pinch of salt,

Pour the eggplant and return to the oven.

Cook until Golden brown. I served with meatballs! Very tasty!!!)))
