Description
The basis of this soup are taken Tuscan tomato soup. But, unlike the original, use broth or water. Turns out the light, summer, vitamin soup.

Cooking
Prepare the ingredients for cooking soup.
On the tomatoes make a cut of "cross", put them in a Cup of water and put to heat on the stove.
In a heavy-bottomed pot or cauldron pour the olive oil.
In oil fry the onion, stirring frequently to not burn. Add a pinch of salt.
Two minutes later after boiling, when the tomatoes starts to peel off the skins, take them out of the water.
Remove the skins and cut the tomatoes.
Cut garlic and a sprig of Basil.
When the onions became soft and started to brown at the edges, add the garlic with the Basil. Fry, stirring, about a minute.
Then add chopped tomatoes.
Bring to the boil and leave to simmer for 10 minutes.
While the soup is cooking, grate cheese on a grater.
At the end of cooking time, remove the soup from the stove and grind the contents with a blender.
Set the table and pour the soup.
Sprinkle with herbs and pour olive oil.
