Recipe dedicated to lovers of raw mushrooms. When I was pregnant, I was given a book "Cebiches del Peru". Magical, amazing colorful edition with a huge number of photos of Peru and ceviche, with recipes that cry out to apply, but... the doctor told me not to eat fish that did not undergo heat treatment. And only allowed me a recipe from this book was the ceviche of mushrooms. Now I know why they say "all the time": in other circumstances I might not have chosen this recipe. And now I know that cebiche of mushrooms is what you need, when raw fish is impossible, and I want ceviche! Try it!

Squeeze of lemon juice. I mixed the lemon and lime. In the recipe juice only a quarter Cup, I took half a Cup.
Chopped fresh hot pepper. Red, green - what will be. The number - to taste.
Peel and finely chop the ginger.
Chop the parsley and coriander. Also a good choice.
Chop the onion feathers. Red looks prettier.
Grind garlic in a mortar.
Mix the dressing of lemon juice, salt, pepper, olive oil, garlic and ginger. I took a little more oil than specified in the recipe, as lemon juice also took more.
Peel and chop raw mushrooms.
Put the mushrooms in the dish, pour dressing, sprinkle with chopped greens and onions. Let stand 20-25 minutes. To serve chilled.
