Vietnamese soup

Ingredients

  • Mushrooms

As in the original recipe, I had a woody dry mushrooms. Which I soaked for 40 minutes (in a not very Krumm boiling water).

Then the broth. Pre-onion and piece of ginger I podbela in the oven and start cooking. In cold water put the drumstick, gave to boil, carefully removed all the foam, put the vegetables. And left to cook for 3 hours.

Until cooked soup, I prepared the rest. Took a piece of beef tenderloin. Put in freezer for an hour.

An hour later, cut here so that's very thin, almost transparent slices. Frozen meat easier to cut thinly.

Sliced, pickled, and added a little black pepper.

Then cut the ginger slices first, and then completely shredded.

Then thinly sliced rings of white onion, hot red pepper.

And the green part of the leeks, because the green onions I, alas, was not.

Put the water on for the noodles.

Cooked it very quickly. Boiled it 3 minutes. What made it same as al dente!

Well, as they say, it's time to assemble the soup. Noodles quickly dipped in boiling water.

Then bowls it on top of the onion rings.

Then ginger.

Then the mushrooms and a ladle of broth (boiling).

Heat the water to boiling is key in the skimmer in small portions and lowered the meat just for a second.

It should look like this - on the sides grayish, and pink inside.

Continue to assemble: add a slice of lemon, sliced a bunch of cilantro and the green part of the leek. Pour the boiling broth.

Be sure to add 2 tbsp of soy sauce into the soup and eat immediately hot :)
