Cake made of meringue with chocolate custard
Cake for fans of meringue and chocolate.

Ingredients

  • Egg white

    3 piece

  • Brown sugar

    220 g

  • Vinegar

    0.5 tsp

  • Corn starch

    1.5 tsp

  • Yolk egg

    3 piece

  • Milk

    100 ml

  • Dark chocolate

    100 g

  • Vanilla sugar

    1 pack

  • Turmeric

    0.25 tsp

1. Protein vzbit in a lush foam, then gradually, 1 tablespoon, to enter the sugar, whisking constantly. Should be dense, smooth and shiny mass. In the end, add the vinegar, then the starch.

2. Baking tray lay a parchment. Protein mass divided into 2 parts. One add turmeric for yellow color. Then use a piping bag and nozzle, as in the photo, to isolate the meringue in the shape of flowers. It needs to hold a bag with a nozzle with an iron tail up and to transplant the "petals" from the center to the edges.

3. Preheat the oven to 100*C and dry meringue. I used almost 3 hours.

4. Meanwhile, RUB the yolks with sugar. Add the milk in a water bath to cook until thick. At the end add the vanilla sugar.

5. Then remove from heat, add broken chocolate and stir to chocolate is melted. Cream cool.

6. Now spread a layer of meringue on top to cover the chocolate cream, then the meringue, and so on until the end. Bon appetit!
