The Breakfast rolls
A simple recipe based on the available products which are in any house will allow you to quickly bake to a delicious Breakfast scones or muffins at the same time to attach the remnants of fermented milk products, raisins, berries or chopped nuts. You can add a little of everything or restricted to one or the other. Or you can bake these muffins without any additives and serve with cheese, butter, yogurt, and berries. I love this baking with yogurt – it is soft and gentle. These cakes with brown crisp are very similar to scones, but less dry. Prepared and baked very quickly.

Ingredients

  • Flour

Pour over the dried fruit with boiling water and dry with paper towel. If very dry, you may lightly steam: wash, pour boiling water, let stand for 10-15 minutes, drain and then dry. Today I have dried apricots and raisins.

Flour mixed with baking powder and sift into a bowl. Add the diced butter at room temperature, and grind the tips of the fingers in crumb mixture.

Add sugar, salt, cinnamon, zest and mix well. Add dried fruit and mix well. Preheat the oven to 200 degrees.

In a bowl with the prepared mixture to pour milk mixed with yogurt, and stir to make a thick, viscous dough. (If the mass is too dry, add a little milk or yogurt). Even if the dough is sticky, don't take too long to knead it, and be careful with the flour: an excess of it will make the cakes more dense.

Put the dough on a work surface dusted with flour. Flatten with hands into a sheet thickness of approximately 2 cm. Glass or hollow cookie cutter to cut out circles with a diameter of 7 – 8 cm Spread on a baking sheet covered with baking paper, at a distance from each other. Lubricate the surface with a beaten egg, if desired, sprinkle with sugar and place in preheated oven. Bake for approximately 15-20 minutes until Golden brown. Cool slightly and serve immediately.
