Puff envelopes with salmon and cheese
It is strange that this recipe on the Internet I have not found. Envelopes with cheese and salmon is a dish which I learned from my beloved mother-in-law. Made simple and fast! It turns out very tasty! For the contest I decided to complicate the task and made puff pastry and the cheese itself. I love to eat them hot, and the husband and children of the cold :-)

Ingredients

Start preparing the puff pastry. Yolk stir in a glass of cold water with a pinch of salt. In a deep Cup pour 2 cups of the flour and pour in the yolk with water.

Knead the dough, add the lemon juice, add 30 grams of margarine. Remove in the cold for 30 min.

Mash margarine and add 0,5 tbsp. flour. stir and form a brick. Remove in the cold for 30 min.

Roll out the dough rectangle in the middle of stacked margarine.

A collapsible envelope. Well zasiyaet region. And turn 2 times to the size of the square. Put them in the cold for 15 minutes. Get, roll out into a rectangle and turn square. Again in the cold. And so 3-4 times to repeat.

Cook homemade cheese. Milk pour into a saucepan and put on high heat. As soon as begins to boil, add vinegar and quickly stir. Gently stir until starts to boil. But do not bring to boil!

Fold the cheesecloth in 5-6 layers stacked in a colander and pour the curdled milk.

Under a press for 1 hour.

In a glass of water diluted with 1 tbsp of salt in the water at least 1 hour to soak the cubes cut the cheese. I have stood the whole night in the fridge. Drain the water and cut into small cubes the resulting cheese.

Pink salmon from the bones.

Cut the salmon cubes, sprinkle with lemon juice and add the herbes de Provence, chopped herbs and vegetable oil. Let stand for 10 minutes.

Roll out thinly the dough. Cut into small squares. In the middle of each to put fish and cheese. Corners to lift and take them up there in the middle.
