Muffin on sourdough

In a bowl sift flour,add salt,sugar,yeast and butter from the fridge,mix the dry ingredients and the oil to RUB between your hands with a dry weight to obtain a crumb of flour.

The resulting flour chips pour the yeast and warm milk,knead the dough until smooth(yogurt add parts to get the dough the right consistency),leave the dough for 1.5 hours(so it has doubled),cover with a towel.

Punch down the risen dough,(you can just form a brick and bake it in the form of bread),divide the dough into three parts,each roll out into a rectangle with the wide part roll into a tight roll.
