Description
A bit of history. With the French “financee” means the financier. For the first time these cakes were cooked in the late 19th century in the bakery near the Paris stock exchange, La Bourse du Commerce. Thanks to their high popularity in Paris they received the name “Finance”. Even outwardly, due to their rectangular shape, they resemble gold bars. Traditionally they are cooked with ground almonds, but I found the recipe with pistachios. Really liked it, I suggest to try and You.

Cooking
Pistachios grind in a blender. Mix them with the flour.
Melt the butter on low heat. A little bit of it to cook to Golden and nutty smell. Remove from the heat and allow it to cool.
Whites slightly beaten with sugar. I whipped until soft peaks form.
Gently combine dry ingredients with beaten egg whites. Then add the cooled butter and again mix gently. Add the cranberries.
The dough is put into greased molds (not necessary to use special that are designed specifically for this type of cupcakes).
Bake in preheated oven for 15 minutes at 200 degrees then another 5 minutes at 180. Get out of shape and allow to cool on a wire rack.
White chocolate melt in a water bath, spread it over the tops of the cupcakes and sprinkle with pistachios.
