Buns
22 March (9 March in the old Julian calendar) day of the Forty martyrs of Sebaste Orthodox Church commemorates fallen soldiers and all the dead relatives. But in our family it is also a day of remembrance of my grandfather. He went through the war, escaped from captivity, in the difficult postwar years raised five children, raised 11 grandchildren (at the moment, already gave birth to grandchildren 20 great-grandchildren!), lived to be 90 years old and died just 22 March. Eternal memory to all deceased... Traditional cakes that day - "Larks". This year I baked cookies from dough on hop leaven, which is not only tasty, but also useful. Try it ;)

To the yeast mixture add 125 ml of water, 120 g of flour, stir until smooth. Then add sugar, salt, vanillin, vegetable oil, mix well.

Add the flour (about 150-200 g) and bran.

Knead the dough (at this stage the "knead" with the help of a fork or spoon, so as not to get your hands dirty), put in a warm place.

After 3 hours the dough will almost double.

Then knead the dough, adding flour (how much) to not stick to hands. Leave for 30-40 minutes to rest under a kitchen towel.

Rested divide the dough into 16 pieces.

From each part to form 5 balls.

Then put it under the braid and make the cuts. Dazzle all the birds, place them on a baking tray lined with baking paper, cover with a towel and leave in a warm place for 30-40 minutes.

Before baking grease the muffin mint syrup, mixed with vegetable oil (1:1), bake at 220*C for 20-25 minutes until it will turn brown. After baking grease the buns with water and leave to cool under a towel.
