Vegetable Frittata
Frittata is an Italian omelet that is cooked with fillings of cheese, vegetables, sausage or meat. Usually a Frittata is cooked on the stove, then bring to readiness in the oven. My version is cooked in the oven. Try it: very simple, quick and delicious!

Ingredients

  • Broccoli

  • Sundried tomatoes

The white part of a leek chopped broccoli disassemble on inflorescences, olives and canned beans drain them from the liquid.

Refractory form of grease with butter, evenly spread the sauteed onion, broccoli, black olives and beans. Season with salt and pepper, sprinkle with a mixture of Provencal herbs.

Pour vegetables into egg mixture, sprinkle with sun dried tomatoes. Bake in a preheated 180 degree oven for about 25-30 minutes.
